Extracting Into Fields
The idea
Extraction pulls specific facts out of messy text into named fields, and the DAIR.AI guide shows that stating the exact output format is what makes it reliable.
In practice
Step one: name every field you want, with a one-line definition of each. Step two: give the exact output layout, one line or one column per field. Step three: allow an honest blank: tell the model to write not stated when the text does not contain a value. Step four: paste the source below a separator. Step five: spot-check a sample of the results against the source, starting with the fields that drive decisions.
Where people slip
Without the not-stated option, a model will often fill a field with a plausible value. A blank you can see is safer than a guess you cannot.
