Gravity and Prevacuum Cycles

The idea
The two basic steam sterilizers differ in how they remove air: gravity displacement and prevacuum.
In practice
In a gravity sterilizer, steam pushes air out through a drain, which is slow in porous loads; a prevacuum sterilizer pumps the air out first, so steam penetrates almost instantly.
Where people slip
Trapped air blocks steam, which is why air removal is tested.
