Each enzyme has an optimal temperature and pH at which its active site binds substrate most effectively, with activity falling off outside that range.

Digestive enzymes in the stomach work best near pH 2, while most enzymes elsewhere prefer a near-neutral pH.

Watch for

Raising temperature speeds a reaction only to an enzyme's optimum — beyond it, activity drops.
