The idea
Capitalize the first word of every sentence and every proper noun and proper adjective.
In practice
Proper nouns name specific people, places, days, holidays, institutions and documents: Monday, New Orleans, the Department of Education. Proper adjectives come from them: Italian, Freudian.

When unsure whether a word is proper, check a dictionary rather than guessing.
