The idea
Protein digestion begins with pepsin in the stomach cleaving proteins into peptides, continues with pancreatic trypsin, chymotrypsin, and elastase, and finishes with peptidases yielding free amino acids.
In practice
Carboxypeptidase and aminopeptidase trim peptides down to single amino acids at the intestinal lining.
Where people slip
Pepsin also activates more of its own precursor, a small positive feedback loop within an otherwise negative-feedback system.
